Recipe: Spinach Filo Pastry Cups
Part 2 of my baking process for my Skillshare class. Really easy recipe. Prep time 20 mins, bake for 40-45 mins.
500g of fresh spinach (or frozen if you prefer)
5 cloves of garlic diced
250g of sour cream
dollop of butter
grated cheddar and parmesan cheese (a bowl full)
Filo pastry sheets – store bought.
Pre heat oven at 190ºc.
Stir fry spinach with garlic with a dollop of butter for 10mins. Rest to cool.
Mix sour cream, grated cheeses together and add in the spinach. (save some cheese for topping before putting it into the oven)
Slice the filo pastry to size and line the cups.
Fill the cups and top with cheese.
Bake for 40-45mins checking on the puff pastry.
And it’s really much easier shooting aerial top shots with the iphone 6 than with the DSLR.
