Childhood Nostalgia: A Recipe For Baking Sardines puffs

Curry puffs and sardines puffs are a big part of my childhood snack. My mother used to buy them from Polar Cake, along with chicken pies for our mid-afternoon after school snacks or sometimes we’d reheat them for breakfast.

My cook extraordinaire friend S shared her recipe and I’ve made two batches of this since. I used store-bought filo pastry and have no shame admitting to it.

Recipe for Sardine puffs

Ingredients:

1 can of sardines (425g) Ayam brand
1 medium onion sliced
2 cloves of garlic minced
1 chilli padi
1 tsp sugar
1tbsp curry powder
1 tsp tumeric
1 tsp lime juice
1 tsp tamarind

Mix this all up and fill the pastry dough pockets. Pre-heat oven at 180ºC and bake it for 20-30mins until it turns golden brown.

If you’d like to make your own shortcrust dough:

1/2 cup cold water
100g butter
300g flour
1tsp salt

Enjoy it with a cup of hot milk tea :)
