Exploring The Rich History of Macao in 10 dishes

This story for the SCMP was a joy to put together as it includes all my favourite things – food, history and culture. I lived in Macao for over 4.5 years and spent most of my days exploring the intoxicating mix of cultural influences, embedded with it stories of voyage and adventures of Portuguese sailors plying the trade routes and spices and ingredients that made their way into dishes.

Macao and its rich legacy in the intoxicating mix of rich flavours

Macanese cuisine has so many similarities to Singapore’s Eurasian food, along with Peranakan food, thanks to the bustling trade routes and influences from Portugal and its colonies from the 14th century onwards.

I spoke to many key figures in the Macanese community, cooks, chefs and historians and were invited to many homecooked meals to discover the richness and complexities of Macanese cuisine.
