We practically spent the day here, and our one night in Lausanne was primarily to go to this restaurant. We took the degustation menu, but also let greed get ahead of us and took their recommendations to also order the signature pork trotters and poulard de Bresse carved tableside.
It was a very strong three Michelin-starred experience and I can’t recommend it enough. Chef Franck Giovannini serves up dishes worth every calorie.
I love how perfectly and orderly the cheeses are aligned – hallmark of Swiss design.
