Private Kitchens are all the rage in Singapore this past year. I went to quite a few during my time back in Singapore and joined a friend’s party for dinner at Jalan Ampang when a vacant spot came up. Our host and home cook Raymond took us through his family recipes and Peranakan cooking he picked up along the way on trips to Penang.
He is especially proud of his sauceless satay bohong, but we really enjoyed the Chinese rojak appetisers, the assam fish alongside the rich and luxurious rendang and ayam buah keluah. All the classic signature Peranakan dishes are on the menu (we opted out of innards that was an option).

It’s a bring your own booze policy here, no corkage charge. Raymond runs his own catering company which he enthusiastically promoted over dinner. The food was fabulous, but the experience kind of in-between being hosted and dining at a private kitchen as Raymond sits at the head of the table and watches everyone eat (awkward art installation subject feeling) while he tells personal stories of yore, in between running to the kitchen to serve the next dish.
If you’re catering for a large party next time, I highly recommend ordering from The Ampang Kitchen.
