Beijing Eats: Slithery Chinese Things

Typical dishes, tofu skin cooked with some innards and the another tofu skin cold dish that reminds me of bracelets.

I prefer the latter much more for its leathery, but soft texture. It tickles when you run your tongue over it while chewing on it.
