My Chinese friends from the other provinces are afraid of these snacks. Out of curiosity and the need to investigate, I went for breakfast at one of the oldest traditional Beijing eatery located right opposite the north gate of the temple of heaven.
I love gorgonzola cheese and those rank century eggs. With that mindset, I was prepared to eat the bowl of decayed soy beans solution. It didn’t taste so bad. It was powdery and grey, and tasted like very sour fermented yogurt, with a more liquidy texture.
A typical meal would be an order of douzhirrr (豆汁)and jiaoquanrr (焦圈). The former is the fermented soy and the latter crisper batter fried like onion rings.
