Provincia’s new menu has done away with the regional division of culinary offerings in Europe and instead is focusing on simple, fresh Italian flavors perfect for the summer. Our salads—a snow crab, celeriac, cucumber and citrus reduction (¥68) and a mozzarella caprese of tomatoes, arugula, basil, black pepper and vinaigrette (¥48)—were both delightful starters. The small pizzas—a Margherita (¥68) and a smoked salmon, caviar pizza with fresh dill (¥88)—were a flavor-packed interlude before our hearty chorizo Bolognese (¥98). Despite having filled up, we couldn’t resist the Swiss chocolate ice cream profiteroles (¥68)—a brilliant final note to a thoroughly enjoyable meal.
