Recipe: Flourless Chocolate Cake
I’ve made this twice now and cannot believe how easy it is with just 3 ingredient for a flourless chocolate cake: Sugar, eggs, chocolate bars. I was looking up recipes on Pinterest and found Girl Gone Gourmet‘s instructions the easiest and most comprehensive.
Great for breakfast or tea time over a Moka brew of some tea. :) I love those Jasper Conran’s Wedgwood Chinoiserie Plates, breaking out all those wedding gifts for utility.
I don’t do desserts that are too sweet, I reduced the 2/3 cups of sugar to 1/3 cup, but it was still a tad too sweet for me as the chocolate bars already contained 18g of sugar, so I further reduced it to 1/4 cup of sugar. Everything else I kept the same and added 3 tablespoons of raw cacao which didn’t make a huge difference. I think the sugar content did for sure. I couldn’t get French organic eggs, so I settled on Thailand eggs. I wasn’t sure about cruelty free American eggs and well, China chickens I imagined are cooped up in tiny spaces and not treated with care.
Another one of my intent is to avoid cruelty free eggs as much as I can. The video is not for the faint hearted, but it is important to know where those eggs are coming from.

What I would give to have a coffee and a piece (or two) of that chocolate cake of yours!
Since we moved to France we also switched to French Organic Eggs, I just can’t go back to even “plein air” ones.

Makes such a huge difference right in flavour! My dad has 3 hens and the eggs are so much more packed with rich flavour than what we buy at the supermarket. We only found 1 shop that sells them here at Blissful Carrot but they are always sold out! Great that you’re back to eating reliably sourced and the best produce!
I wish you were just round the corner so we can eat cake, have coffee, take photos and have a tete à tete like the old days!!

And I think it’s a known fact that the China hens have got injections to grow bigger sooner too. My OZ friend said the eggs from the China hens were so much better than the OZ eggs. That was 20+ years ago. Not anymore.
