I repurposed this story for Saveur that was killed for Macao Magazine.
What Is cha gordo?
Known as the Macanese High Tea, this culinary tradition is a tea banquet that serves unique Macanese dishes that are neither classified as Chinese nor Portuguese. The repertoire of dishes evolved in households through generations where the family cooks and matriarchs cooked up delicious feasts that combined the flavours and ingredients of Portuguese food, along with Chinese flavour profiles and ingredients – what was available int he wet markets.
Here’s another piece I wrote for the SCMP on Cha Gordo and another cultural piece on “Cha Gordo” which literally translates to “Fat Tea”
